NEW YORK (AP) - A new ice cream store specializing in a style of ice cream popularized in the Middle East has opened in New York City.
The Republic of Booza opened Monday in Brooklyn with a variety of flavors for the cold treat commonly found in the Levant. The New York Times reports booza has a peculiar texture - with elasticity similar to certain fresh cheeses that also makes it very resistant to melting.
The texture of booza is the result of a combination of ground roots of orchid plants and a pounding technique.
Owner Michael Sadler says booza predates any other form of ice cream. His shop offers many different flavors, including strawberry, black walnut, salted caramel and saffron and peppercorn.
