ANALYSIS/OPINION:
April is National Grilled Cheese Month — no Fool’s Day joke here — and Cheeses of France has unveiled samples for choosey cheese fans to coincide with other special days throughout the fourth month, as April 11 is National Fondue Day and April 12 is National Grilled Sandwich Day.
Cheeses of France’s Beaufort is sharp in profile, much like a Swiss-cheddar combo. Recommend pairing this one with a red wine of suitable character, such as a decent pinot noir.
The Comte is pleasant and crisp to the palate, and would be complemented especially nicely by say an IPA or pale ale.
The winner of the bunch is, unquestionably, the Mimolette, which boasts an absolutely amazing flavor. This special cheese can be rightly enjoyed entirely on its own, but for liquid pairing, reach for a tall glass of airy pinot grigio.
