ANALYSIS/OPINION:

One typically thinks of cheese being paired with wine, but Northern California artisan goat cheese maker Cypress Grove, who recently held court at Great American Beer Festival, is enriching the lives of beer enthusiasts with its recommendation for pairing some of its products with certain of the more popular kinds of craft beers.

For its patented Humboldt Fog, a wheel of ripened goat cheese served in an edible vegetable ash ribbon, Cypress recommends pairing with American wheats or IPAs, with the hops complementing nicely the rather flavorful offering. Pair up the Midnight Moon with higher-octane dubbels or porters for a fine example of suds and goats milk working in harmony. Finally, with the Purple Haze, even Jimi Hendrix would recommend wheaty hefeweizens or hoppier red ales for the optimal flavor profile.
